Decanting a wine serves two purposes. First, with older wines it removes the sediment that may have collected through the years at the bottom of the bottle. Sediment, though harmless, can be unsightly and slightly unpleasant in the mouth. Decanting also serves to aerate a wine, allowing it to open up and reveal flavors that were hidden while cooped up inside the corked bottle. The simple act of pouring the wine from the bottle into the decanter allows the wine to “breathe”.
